Do you have any tasty and healthy kale recipes?

My quest to stay healthy and keep my blood sugars under control has included lots of education about the healthiest foods for anyone, not just people with diabetes.
Kale comes up on everyone’s list of healthy greens, at least in my research.
I got this butt load of kale delivered by Safeway today, and it’s on my menu for dinner tonight.
I’ve found two really tasty-sounding recipes (steaming and sauteed).
I’m considering the sauteed recipe because this one includes garlic and red wine vinegar (two of my favorites).
Anyone have any tasty, healthy, and easy (because I’m a slug today) kale recipes?

  2. Teena, yes. And there's a week's worth of fiber in a bowl 🙂 I sauteed the kale with lots of garlic!
